Pumpkin Bread
Classic Pumpkin Bread
1 16-oz. can pumpkin 3½ cups flour 3 eggs 2 cups sugar ½ cup oil 2 tsp. baking soda ½ cup applesauce ½ t. salt 2/3 cup orange juice or cider 4 tsp pumpkin pie spice Preheat oven to 350°F. In a large bowl, mix pumpkin, eggs, oil and juice until well blended. Sift together flour, sugar, baking soda, salt and spices. Add dry ingredients to pumpkin mixture; beat until smooth. Pour batter into two greased and floured loaf pans. Bake for 1 hour or until bread tests done. Remove bread from pans and cool on a wire rack.

we can't get canned pumpkin here, would ordinary mashed pumpkin do? also, what do you serve this with? Peggy - you must be the Queen of Halloween!!!
you can use mashed pumpkin or even sweet potatoes. I love spreading a slice with butter while bread is still hot and eating it with a nice cup of hot tea. Its like banana bread so more of a sweet bread for dessert or snack.
