Pumpkin Delight
Pumpkin Delight
2 c. cooked pumpkin
1 stick melted butter
2 c. sugar
1 tsp. vanilla
1 tsp. lemon extract
4 eggs
1/2 c. self rising flour
1/2 c. milk
1/2 c. chopped nuts
Beat eggs. Add melted butter, pumpkin, vanilla, lemon, and milk. Mix well. Add sugar, flour, and nuts. Mix well. Pour into greased and floured sheet cake pan. Bake at 375 for 35-40 minutes or until done. Let cool real well before cutting.
