Broccoli Casserole
Each of the girls have their favorite dish they ask for at our family dinners. Melody always wants to know if I am bringing 2 certain casseroles and this is the recipe for one of them. The kids don't like broccoli but they love this.
1 (10oz.) pkg. frozen chopped broccoli
1/2 c. water
1/2 stick butter
1/2 c. chopped onions
1c. grated sharp cheese
1 can creamy chicken soup (undiluted)
3/4 c. wild rice (uncooked) 1 c. bread crumbs
Put broccoli, water and butter in saucepan. Cook til all is melted and blended. Add onions, soup and rice. Stir until mixed. Add cheese (save a couple spoons full of cheese for top). Pour into greased casserole dish. Top with bread crumbs and saved cheese. Bake covered for 20 minutes. Uncover and cook for 5 minutes.
