Parsley Honey
Have been reading the "We'll Eat Again" cookbook from the war years. (I just love this book!) Found a good recipe for a different flavored honey. There are so many recipes with such little ingredients but tasty. Thought I would share this one with you today.
Cooking time: 3/4 hour Quantity: 1 pound
5 oz. parsley (including stalks) 1 lb. sugar
1 1/2 pints water 1/2 teaspoon vinegar
Method: Pick parsley and wash well. Dry. Chop stalks up roughly. Put into a pan with 1 1/2 pints of boiling water and boil until it reduces to a pint. Strain Add 1 lb sugar and boil until syrupy (like honey) about 20 minutes, then add 1/2 teaspoon vinegar. Pour into pots and cover. This jells by the next day and tastes and looks like heather honey.
