Veggie Soup



No its not a recipe for baby bunnies! I just had to show you how they are growing. Aren't they cute?


Vegetable Soup
The secret to my vegetable soup is V8 juice. I pour a quart in the soup pot and go from there. I peel and dice a couple of turnips. peel and dice a sweet potato (yes sweet). Peel and dice 2 white potatoes. Dice up a small bunch of green onions. Peel and slice a couple of carrots. dice up a couple of celery stalks. Toss in a small handful of dried beans (I use navy) Toss in a handful of lentils. Any veggie leftovers I have in the fridge like beans, corn, peas, etc I toss them in. Add desired amount of water for soup thickness. I add 2 chicken bouillon cubes, sea salt and fresh ground black pepper along with a couple cloves of garlic. Simmer this on the back of your stove all day or cook on low in your crock pot. The last hour I toss in a handful of noodles. If you want you can add some cooked ground beef or any leftover meat from the fridge diced up at that time too. This makes a big pot and I share with my neighbors so we can all enjoy a nice big bowl full on a cold winters day. Will post more recipes later.

Sorry iI havent been on for a while, Thought i should pop in see how ms Diva going had to read back and see she keeping warm in her fleecy jacket. That little bunny sure looks cute I better not let the Grandaughters see it other wise they will want one.

Thank you so much for sharing the secrets of soup making. I put V8 juice at the top of my market list. I am going to give it a try. Bunnys are so cute and boy they sure do grow fast. Have a wonderful week on the farm.
