Eggnog Mini Loaves
2 1/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 eggs
1 cup sugar
1 cup eggnog
1/2 cup butter melted
2 teaspoons vanilla extract
2 teaspoons rum extract
In a large bowl combine the flour, baking powder, salt, cinnamon,and nutmeg. In another bowl, beat the eggs, sugar, eggnog, butter and extracts, stirring into the dry ingredients just until moistened. Pour into 3 greased 53/4 by 3 by 2 inch loaf pans. Bake at 350 for 30-35 minutes. Cool for 10 minutes before removing from pans to wire racks.

You know, I've never tried eggnog, what on earth is it apart from obviously eggs?
You know these look really good,every year we buy eggnog,but can never finish off a container(we have some sitting in the icebox now)~we usually end up throwing it out~what a great way to use it up!!
